Stew of summer vegetables with cheese burger (baby eats)
Ingredients
4 cheeseburgers (fresh market)
4 servings chervil (frozen)
250g cherry tomatoes
Two orange peppers
2 courgettes
1 aubergine
1 bunch spring onions
0.5 lemon
2 red onions
400g chickpeas (jar)
1 coffeesp. sugar
4 tbsp. olive oil
1 coffeesp. paprika
1 coffeesp. oregano (dried)
1 coffeesp. basil (dried)
pepper and salt
Preparation
(15 min.)
- Remove the seeds and white pith from the peppers and cut the flesh into cubes.
- Cut the zucchini and eggplant into cubes.
- Chop the red onion and the spring onions finely.
- Press half a lemon.
Preparation (20 min.)
1 Heat 2 Tbsp. olive oil in a pan and fry the red onion, the
zucchini and eggplant 2 minutes. Add the diced pepper, oregano, basil, spring onions and 1 cup water. Allow 10 min. Simmer covered, stirring occasionally.
2 Add the cherry tomatoes, chickpeas, sugar and lemon juice. Allow 6 min. Simmer and season with salt and pepper. Add the frozen chervil increasing.
3 Meanwhile, heat 2 Tbsp. olive oil in a frying pan and fry the cheese burgers until golden brown on each side.
Finish
Serve with rice, couscous or pasta at.
